In the atmospheric lofts of Modena, you’ll discover the patience required to produce traditional Balsamico di Modena, aged in centuries-old wooden barrels. Following a traditional lunch of handmade pasta and slow-cooked ragu in the city center, we head into the hills for the ultimate “Prosciutto Experience.” You’ll explore the curing rooms of the “King of Hams,” DOP Prosciutto di Parma, and after, venture off the beaten path to taste black pig salumi—a delicacy that is as special as it is difficult to find outside of Italy.

Medieval Streets to Rural Luxury

After a stroll through the elegant streets of Parma to settle the “disagreement” between Emilian and Romagnan street food styles, we’ll indulge in local pastries and world-class gelato. The scenery then shifts as we check into a fortified 14th-century castle estate perched on the banks of the Po River. This area is the birthplace of the legendary Culatello; you’ll tour the historic aging cellars where the river’s unique mist helps develop the world’s rarest ham, followed by a hands-on cooking class to master the local techniques yourself.

The Peak of Emilian Romagnan Dining

Your gastro-adventure reaches its crescendo with a farewell dinner within the castle’s own Michelin-starred dining room, a refined celebration of farm-to-table excellence that pushes the boundaries of traditional Emilian flavors. On your final morning, enjoy one last breakfast of estate-made preserves and cured meats before your private transfer returns you to Milan.

You will try well known foods like prosciutto di Parma and Sicilian extra virgin olive oil, as well as delicacies available only in specific areas like black pig culatello and pasta made from ancient Russello grain. These products are the epitome of regional Italian food, which in reality, is all Italian food. Not only will you try unique, regional specialties, you’ll go behind the scenes to meet and experience the people who still make them the traditional way.

Our regionally focused tours are specially curated for small, intimate groups of about 16 or less. With us, there is no trouncing around the city following an umbrella, no ‘meh’ meals, no generic, surface-level experiences, no sitting on a bus for hours with 55 strangers.

We also collaborate with our close friends in the artisan food world (and we literally mean friends) to offer full and half day food focused and regionally specific experiences to learn about all things Italian food. From Tuscan extra virgin olive oil, to chocolate from Modica, and even hands on cooking classes, you will be hosted by artisans who don’t just know the food they’re talking about, they grew up with it.

On top of all of that, we partner with the University of Gastronomic Science to give you tailored access to educational seminars and tastings to prep your palate and get your mind ‘food-focused’.

Our objective is for you to not just enjoy the experience, but to be immersed in it. By the end of the tour, we want you to view food differently and be inspired to incorporate what you learned into your everyday meals. 

We believe in the power of food to bring people together. Meet Your Curators

Alberto Boasso

As a fisherman and forager, Alberto is an ambassador of cultural heritage and traditional food knowledge. Born and raised in Genova, Liguria, he has always been immersed in and connected with food: long afternoons spent with family preserving anchovies, preparing ravioli, making pesto… family rituals of community, sharing, and togetherness.

These rituals, combined with the surrounding forests and the sea – the true terroir – have played a fundamental role in shaping his passion for culture and cuisine. He was able to then further hone his gastronomy focus with a Master’s Degree from the University of Gastronomic Sciences.

Alberto’s life goal is to spread good food traditions and values, such as respect for the land and those who work it, the importance of biodiversity and sustainability, and the awareness that every food choice has a profound impact not only on our health but also on the health of our planet. It is in these practices that we can preserve both the art and taste of traditional Italian products for generations to come.

James Pronio

James grew up surrounded by food – literally. From an early age, he worked alongside his father and grandfather in his family’s Italian grocery store, weaving a lifelong passion for exceptional ingredients into both his work and personal life.

Over the past 20 years, James has worked in every part of the food supply chain, managing and collaborating on projects in New York City, Washington DC, Scotland, and Italy. Now living in Florence, Italy, he works together with his brother in Texas, importing artisan Sicilian extra virgin olive oil and ancient grain pasta to the US.

This extensive experience, combined a Master’s Degree from the University of Gastronomic Sciences and his enduring love of cooking, has given James a deep appreciation for, and knowledge of, the craftsmanship, tradition, and care behind truly high-quality food.

Continuing the tradition his family instilled in him as a child, he firmly believes “A tavola non s’invecchia” (At the table, one does not grow old).
